I’m late in posting this again…

Saturday: Date Night – We went out to dinner at a Japanese steak house for our make-up Valentine’s Day.

Sunday: Sautéed Tilapia with Honey-Scallion Dressing over Rice Noodles and Salad Greens – This was seriously the easiest meal ever. It took like 15 minutes to make. And it was light and fresh.

Monday: Chicken Scaloppine over Broccoli Rabe with Steamed Baby Carrots and Squash – Okay so our grocery store didn’t have broccoli rabe, so we just used broccoli. Overall this meal wasn’t particularly spectacular, but I did like that it had very different flavors from what we usually eat.

Tuesday: Loaded Quinoa Veggie Burgers with Spicy Oven Fries and Salad – YES. These were really good. We’ve made black bean burgers before, but these burgers had both black beans and quinoa. Quinoa (pronounced keen-wa) is grain-like (though it’s not technically a grain), and it’s high in protein. It looks kind of like couscous but with more of a wheat-y, nutty taste. I liked that it made these veggie burgers heartier and it actually gave them a texture that was much closer to a normal burger.

Wednesday: Spicy Garlic and Lime Black Bean Enchiladas – We have made these before. It’s definitely a delicious and filling vegetarian meal. And it makes a ton of leftovers, which provides us with a few days of lunch.

Thursday: Pork Chops Agrodolce with Couscous and Sautéed Peppers and Onions – We have made this one before, as well. The sauce is rich and flavorful.

Friday: Sweet Potato Chicken Curry with Rice – This is a new one. It’s been a while since we had a curry dish, so I’m excited to try this one.
